Jelly Doughnuts

Nothing beats soft jelly doughnuts on a chilly evening…

I always liked doughnuts, but I never really tried making any – I just went for the perfect store bought ones you know? so I tried the homemade version one and it’s x100 times better! But I’m warning you, you can’t have those everyday if you’re don’t want to gain any extra pounds! And these are sort of addictive.

I fill mine with either Jelly or custard, I used apricot jelly this time 🙂 but you can just roll yours in sugar when they’re still warm if you prefer. While frying, fry on medium heat as you don’t want your doughnuts to stay raw in the inside while already brown and crispy from the outside. Serve warm or cold with a nice cup of tea!

Jelly Doughnuts Recipe
  • 2 1/2 tsp instant dry yeast
  • 2/3 cup warm milk
  • 3 1/2 cups all purpose flour
  • 1/3 cup sugar
  • 2 tsp salt
  • 3 eggs
  • 7 tbsp butter cut into pieces
  • 2 cups corn oil
  • 1/4 cup fruit jelly or custard
  • more sugar for dusting


Mix together yeast and milk and let set in a warm place for 10-15 minutes or until it gets bubbly. Then add sugar, flour, eggs and salt. Mix until combined. Then add butter cubes gradually and mix well.

Set bowl aside, cover with a damp cloth and let it rise until it doubles in size. 
Roll out dough and form 12 big round pieces of dough or 24 small ones with the help of a cookie cutter or a glass. Let the dough balls sit on a greased surface (covered) for about an hour or until they double in size.
When dough balls are ready to be fried, heat the oil in a skillet and start dropping your dough into oil and fry each side for about 2 minutes.
Once your doughnuts are cooled, fill a piping bag with jelly or custard and fill doughnuts. Enjoy!

    Nutella Puff Pastry

    So let’s say your friends phoned up and told you that they would like to pass by in an hour, and you have no time to bake a cake or anything else. Baking Nutella puffy pastries could be a good idea since it’s super simple and quick! This is also super fun with the endless shapes that you can create!

    And the best part? you only need three ingredients to make them!

    Nutella Puff Pastry Recipe
    • 1 pre-made puffy pastry sheet (or squares)
    • Nutella or any other kind of chocolate
    • 1 egg (beaten)


    Preheat oven to 200°c.

    Fold each square as shown below with spreading a layer of nutella using a rubber spatula, then lightly egg wash the pastry.
    Place your pastries apart on a cookie sheet and bake until golden.

      Cherry Tomato and Rosemary Focaccia

      Whoever told you that baking your own bread at home isn’t simple and easy, lied to you. True that, picking up a loaf of fresh bread from your local bakery or supermarket is very convenient, but nothing can be more satisfying that working on your own dough on your kitchen counter and then enjoying the rewards of your work! Not only that, but you also will be able to control what sort of ingredients go into your bread, no hidden calories or fats, and definitely no powdered chemicals! Just basic, fresh, healthy ingredients! How satisfying!

      After posting the amazing Strawberry Focaccia Bread recipe, which btw is currently most favourited recipe by you guys on my blog! So, one of you left me a message asking me about savoury focaccia bread, how is it made, if the same recipe can be used, and what it can be topped with? So I made this post to answer your questions! Yes, the recipe is almost the same, you just have to add a more salt into your savoury focaccia bread but everything else is about the same. You can add whatever your heart pleases (Tomatoes, baby potatoes, figs, cheese, garlic and herbs, olives, you name it!). So in this recipe I decided to add cherry tomatoes because a) I like them and b) their colour is brilliant. I also added 2 little organic shallots, and fresh rosemary leaves from our garden!

      Cherry Tomato and Rosemary Focaccia Bread Recipe
      • cherry tomatoes (cut in halves – I used about 12)
      • rosemary (fresh or dried)
      • 2 shallots
      • 175 ml warm water
      • 1/2 tsp instant yeast
      • 250 grams all purpose flour
      • 25 ml olive oil
      • 1 tsp sugar
      • 1 tsp sea salt

      Add warm water to yeast and sugar and and let it stand in a warm place until it bubbles.
      In a mix bowl mix flour with salt, then add the yeast mixture and knead. Add oil and knead for 5 more minutes. Cover with a damp cloth and let the dough rise until it doubles in size.
      Give it an another knead and then spread on a baking tray with parchment paper, press in the cherry tomatoes, shallots, and sprinkle with rosemary and sea salt.

      Bake for 40-45 minutes or until golden on 180°c. Enjoy!

        Strawberry Watermelon Smoothie

        Nothing can be more refreshing than a fresh strawberry watermelon smoothie on a hot summer day!
        Summer is almost here, watermelons finally appeared in stores, it is almost the end of the season for strawberries, and oranges are still sold everywhere! Who doesn’t love fresh summer fruit? especially if these fruits happen to be in one refreshing smoothie?? I mean, I don’t mind eating these fruits for breakfast, snacks, lunch, or even after dinner!

        So let’s talk about what I’ve done here, this is extremely simple. No hidden calories, no sugar added, just the good stuff! I simply crushed pieces of sweet watermelon with freshly hand picked strawberries and added a little but of freshly squeezed orange juice, and there you go! Enjoy the smoothie!
        Strawberry Watermelon Smoothie Recipe
        • 2 1/2 cups watermelon
        • 1 cup strawberries
        • 1/2 orange (freshly squeezed juice)
        • * You can make slushies by adding some ice cubes and crush them in your blender
        Wash strawberries. Combine all of your ingredients then place in a food processor and blend until smooth, enjoy!

          Loquat Upside Down Cake

          A sweet fluffy cake topped with caramel loquats. This tastes magical!
          So this is the season of sweet loquats! Oh how I love these fruits…! In our garden we have 4 trees, and all of them are seed grown! So this year we got loads and loads of loquats… I never know what to do with them rather than just eat the fruit straight from the tree. So I decided to 1. try to bake an upside down loquat cake with caramel 2. make jam.

          The jam will be ready tomorrow but the cake was ready today! And all I can say is, EVERYONE in my family fell IN LOVE with it!!! I couldn’t wait to have a piece of this wonderful cake after dinner, so I ended up having one (ok maybe two) before eating the food 🙂 yes, it is THAT good!
          This recipe is very similar to the other upside down cake recipes, I just added cinnamon to the topping but you can also add any other spices that you like (for a spicy Loquat cake) you can add ginger, nutmeg, cloves….
          Loquat Upside Down Cake Recipe
          • For the topping:
          • 20-30 fresh loquats halved and pitted
          • 3/4 cups brown sugar
          • 2 tbsp butter

          • For the cake:
          • 1 3/4 cups all purpose flour
          • 1 1/2 tsp baking powder
          • 1/2 tsp baking soda
          • 1/2 tsp salt
          • 1/2 tsp ground cinnamon
          • 1 stick butter
          • 3/4 granulated sugar
          • 2 tsp vanilla
          • 2 eggs
          • 3/4 cups milk

          1. Preheat oven to 190°.
          2. For the topping: melt the butter and mix with brown sugar. Arrange loquats on a greased pan with cut sides down. Then pour the melted butter with the brown sugar over the loquats.
          3. In a bowl sift together flour with baking powder, baking soda, salt, and cinnamon.
          4. In another bowl cream butter with granulated sugar until smoothy and creamy. Then beat in vanilla and eggs. Combine dry ingredients with the batter mix, then add the milk and beat.
          5. Pour batter over loquats. Bake in the oven for 40 minutes or until a toothpick comes out clean.
          6. Let cake cool for 10 minutes then flip it over a plate (before the caramel becomes sticky!). 
            Serve warm with a scoop of vanilla ice cream (optional).

            Healthy Strawberry Oats Milkshake

            Try this Strawberry milkshake recipe for some serious feel good energy in the morning!

            A 30 second breakfast meal that will give you energy throughout your day. This is a very simple milkshake that I usually make in the morning when I’m in a rush, I used fresh strawberries, honey, milk and oats. But you can also add a banana, and some pineapple chunks for a wonderful combination.

            • 1/2 cup fresh strawberries
            • 1/2 cup fresh milk
            • 1 tbsp honey
            • 1 tbsp quick oats
            • 1 banana (optional)
            • 1/2 cup pineapple chunks (optional)

            Wash strawberries. Combine all of your ingredients then place in a food processor and blend until smooth, enjoy!

            30 Minutes Bread Rolls

            Simple, delicious, 30 minutes bread rolls…
            This is the only bread rolls recipe that you will ever need! And they taste as good as the 2 hours bread rolls. It’s great as they only take half an hour to prepare, so let’s say if you’re in a rush and need some bread for a family lunch/dinner, then this is the perfect recipe for you!

            This is very simple, mix the ingredients together (when it comes to yeast, the best thing to do is add the yeast to a quarter cup of lukewarm water and 1tsp of sugar, let it get bubbly for about 10 minutes in a warm place, then it’s ready to use), leave the dough to rise for about 15 minutes, then give it a soft knead and form 12 equal balls. Place into a greased pan and allow to rest for 10 more minutes).

            The bread rolls will be ready after 10 minutes of baking or until golden brown. You will love them! I promise!

            • 1 cup lukewarm water
            • 1/3 cup oil
            • 2 tbsp yeast
            • 1/4 cup sugar
            • 1 1/2 tsp salt
            • 1 egg
            • 3 1/2 cups flour

            1. Preheat your oven to 200Âş.
            2. Mix all ingredients together to create a dough ball, knead then let it rise for 15 minutes (cover with damp cloth and leave it in a warm place).
            3. Knead for a minute then form into 12 equal balls and place into a greased pan, allow to rest for 10 minutes. Bake for 10 minutes or until golden brown.
